A health-focused Mediterranean chain restaurant is entering its final stages of preparation to open its first Northern California location, which will be in Roseville.<\/p>\n

Spitz Mediterranean Street Food, based out of Los Angeles, is expected to make its north state debut next month, according to franchisee Jaskarn \u201cJaz\u201d Sibia. The region\u2019s first Spitz location is replacing a Pieology restaurant at 2030 Douglas Blvd., Suite 30.<\/p>\n

<\/p>\n

Sibia previously told The Sacramento Bee that he and business partner Sandeep Gill had an instant love for the restaurant\u2019s take on classic Mediterranean fare when they tried it in 2024. From that point on, the pair were adamant they wanted to introduce the concept to their hometown.<\/p>\n

<\/p>\n

\u201cWe\u2019re super stoked,\u201d Sibia said. \u201cWe got such a diverse, bold, vibrant menu.\u201d<\/p>\n

<\/p>\n

Spitz\u2019s offerings include loaded doner wraps, street fries, salad bowls and more. The restaurant also has vegan versions of many of its most popular menu items, substituting meat for falafel and its aioli and tzatziki sauces with lemon-herb tahini dressing.<\/p>\n

<\/p>\n

Though the restaurateurs originally hoped to launch the eatery in April, some paperwork delays have pushed the expected grand opening to late June or early July, Sibia said.<\/p>\n

\u201cThe kitchen is pretty much wrapping up right now, and our next step is really focusing on that lobby,\u201d Sibia said. \u201cWe\u2019re gonna have an artist from LA fly in and pretty much … spray paint the whole store. He\u2019s keeping a local touch, so he\u2019s pulling parts of things from the local Roseville community, and he\u2019s going to hand draw pretty much the whole lobby.\u201d<\/p>\n

<\/p>\n

The new Roseville Spitz restaurant will begin hiring its staff in about two weeks, Sibia said.<\/p>\n

<\/p>\n

Once the restaurant is set to open in the summer, Sibia said there will be a soft opening event for first responders, with free meals for firefighters, police officers and healthcare workers.<\/p>\n

A larger grand opening party open to the public will include a DJ, face painting and merchandise giveaways throughout the day, according to Sibia. The Spitz team will share further details on the eatery\u2019s Instagram, Facebook and TikTok pages as they become available.<\/p>\n

\u201cIt\u2019s exciting because we got a great community behind us,\u201d Sibia said. \u201cWe\u2019ve had a lot of people stop by, checking out the store … We\u2019ve never had this when new people walk in and ask when we\u2019re opening. It\u2019s been really cool to see.\u201d<\/p>\n

Currently, Spitz has six California locations, all in the Los Angeles and San Diego areas. While Sibia and Gill have been developing the Roseville Spitz location, they have also been making plans to introduce the chain to other parts of Northern California.<\/p>\n

<\/p>\n

Sibia said the pair have started developing other sites in the Sacramento region, and eventually they hope to open Spitz restaurants in the Bay Area.<\/p>\n

\u201cI personally have been craving (Spitz) for like, months,\u201d Sibia said. \u201cI am super excited to try (the food) … I haven\u2019t had it in a while.\u201d<\/p>\n

<\/p>\n
