Cafe serving Japanese-style souffle pancakes to open in Elk Grove

An authentic Japanese souffle pancake restaurant will hold its grand opening next month in a popular Elk Grove shopping center.

Fluffy Fluffy Cafe is scheduled to hold its grand opening on Sept. 18 at 8150 Elk Grove Blvd. in The Village shopping plaza. The restaurant will serve both sweet and savory pancakes, coffee and other foods.

The business is in its soft opening phase and is offering a limited menu to customers who drop by.

Originally from Japan, souffle pancakes are smaller and fluffier versions of breakfast pancakes thanks to a meringue-based batter.

The owner of the Elk Grove franchise, Tran Do, said opening a business was a lifelong dream.

Coming from a family of Vietnamese immigrants, Do wanted a stable career. She combined her love for making souffle pancakes for her children and her ambition to open a business. She left her career as a certified public accountant to launch the restaurant.

“(Now) I finally had the opportunity to do it,” Do said. “My kids were a little older, and I saved up enough money, so then I was like, ‘let’s go! I love pancakes.’”

The cafe sells sweet pancakes such as tiramisu, matcha tiramisu, cookies and cream, strawberry, Nutella banana, and creme brulee, according to its online menu. Savory dishes include jalapeno maple chicken and pancakes, and an avocado eggs Benedict with a souffle pancake base.

It also serves roll cakes, macarons, cheesecake and other sweets. Do said the cafe also has “ceremonial grade” matcha straight from Kyoto, Japan.

With more than 20 locations internationally, the chain also has a Davis location on Russell Boulevard which opened in January. There are 16 cafes in the United States, according to the website.

Fluffy Fluffy Cafe in Elk Grove is open from 10 a.m. to 2 p.m. and 4 p.m. to 8 p.m. daily. After the grand opening, hours will expand from 10 a.m. to 9 p.m., Do said.
