Proxy International Coffee Co. had its grand opening Saturday complete with a raffle, samples and beverages for purchase. Proxy sells goods out of a truck in the parking lot of 931 Lassen Lane.
Although the shop is technically a food truck, Proxy is associated with the Vintage Grace church, which opens a lounge area to Proxy customers.
“We wanted something local that would just be a really special place where people could just come hang out and have a really good experience,” said Heather Hodson, who runs Proxy alongside Jennifer Wingfield.
Proxy’s beverages range from $3 to $6 before add-ons. Prices include an espresso at $3, cold brew at $5, matcha at $6 and a latte at $5, according to a menu. Customers can order ahead of time online, at proxy-coffee.square.site, or in person.

Flavor syrups cost $0.50. Options include vanilla, maple, lavender, chocolate, brown sugar, caramel and hazelnut. Cold foam is available at $1.50 and almond or oak milk costs an additional $1.
It is open from 7 a.m. to 4 p.m. Monday through Thursday, 7 a.m. to 1:30 p.m. Friday and Saturday and 8 a.m. to 1:30 p.m. on Sunday, according to the coffee shop’s website.
Proxy will employ roughly six baristas in addition to Hodson and Wingfield.
The coffee shop’s profits will go to organizations helping orphans at refugee camps in Uganda.
“We started just roasting small batches of beach … and there was a great response to that and we were like ‘What if this grew, and we turned it into a full-blown coffee shop?’” Hodson said.
