Sacramento County Health Inspectors closed a local taqueria after finding health food violations including dead and live cockroaches. What do these inspections mean? While a yellow placard signals two or more major violations, these are typically corrected or mitigated during the inspection, according to the Sacramento County Retail Food Inspection Guide.

A red placard, however, signals “imminent danger to public health and safety” and suspends an establishment’s health permit until violations are corrected. This could include, but is not limited to, major vermin contamination. In contrast, a green placard means a restaurant passed inspection.
The county performs about 14,000 inspections annually and about 97% of establishments pass, spokesman Ken Casparis previously told The Sacramento Bee. Approximately 1% of inspections result in a closure, he said. These were the results of Sacramento County food facility inspections for Thursday, July 9, through Wednesday, July 15, as of Thursday, July 16. Sacramento County Health Inspectors gave a red placard to the Land Park location of the Los Inmortales Taqueria chain after finding dead and live cockroaches throughout the facility.

The health inspection noted:
- Cooked onions and jalapeños in the salsa bar were stored above proper temperature control levels
- Whole fish was improperly thawed in a container of still water.
- 2 dead German nymph cockroaches, one on hand sink in kitchen, one on floor in corner at end of the cook’s line.
- 6 live German nymph cockroaches underneath the hand sink and elsewhere in the facility
- The hand wash and compartment sinks did not reach the required hot temperature levels of 100 and 120 degrees, respectively.
- Employees engaged in improper handwashing practices and not using designated handwashing sinks.
- The facility’s food handler cards were not available for review.
- A container of cooked pinto beans was improperly cooled
- Raw chicken was stored over raw lettuce in a reach-in cooler.
- The walk-in cooler had an ambient temperature of 53 degrees, 12 degrees above the safe temperature level.
The taqueria was reinspected on Tuesday, Aug. 4 and cleared to re-open.
The reinspection report notes that the facility had been serviced by a professional pest control company between the first and second inspections. Health inspectors found approximately 20 dead cockroaches during the reinspection, but no live vermin.
The Los Inmortales chain has four other locations in the Sacramento area. The Bee reached out to the Broadway location but no manager was onsite.
